This pasta is a filling dish that is perfect when you feel low on energy and need a pick-me-up. It has fiber from the pasta and vitamins from the zucchini. Serve this with a salad and it's the perfect meal! 

For more protein, add grilled chicken. If you want more fiber, substitute whole wheat pasta, chickpea pasta, or lentil pasta.

3 Tbsps olive oil
1 Zucchini (cut into ribbons)
2 garlic cloves (chopped)
cup white wine
½ cup Parmesan (freshly grated)
1 bunch Basil
salt
freshly ground peppers

Preparation steps

1.
Cook the pasta in boiling, salted water until al dente, according to the instructions on the packet.
2.
Heat the oil in a large saucepan and fry the courgette and garlic with a pinch of salt. Pour in the white wine and leave to reduce for a few minutes.
3.
Drain the pasta. Add to the courgettes and toss. Season with salt and pepper and arrange on warmed plates. Serve with a little grated parmesan and freshly picked basil.
