3 stalks Leeks (600 grams)
1 Tbsp olive oil
2 tsps Cultured butter (10 grams)
salt
1 small garlic clove
2 Tbsps Anisette (or 1 pinch of ground anise)
150 milliliters Vegetable broth
150 milliliters Soy creamer
350 grams small Pasta (eg conchiglie shells)
coarsely ground peppers
30 grams Salmon caviar (from a jar)

Preparation steps

1.

Rinse leeks and cut lengthwise into quarters. Cut light and dark parts of leeks diagonally into small pieces.

2.

Heat oil and butter in a pot. Add leeks, lightly salt and cook over low heat 2 minutes. In a large pot, bring salted water to a boil.

3.

Peel garlic and squeeze through a garlic press into the leeks. Season with anisette or aniseed.

4.

Pour in broth and soy creamer and let simmer, stirring occasionally, for 10 minutes at medium heat. Meanwhile, cook the pasta according to package directions in boiling salted water until al dente.

5.

Season the sauce with salt and pepper, stir in half of the caviar and reserve the rest for garnishing. Strain the pasta, drain and serve with the sauce.
