2 cups boiling water
14 ozs Couscous
4 Tbsps extra virgin olive oil
1 lemon (juice)
2 Tbsps chopped cilantro
1 Tbsp chopped mint
6 sunblush Tomatoes (chopped)
14 ozs canned cannellini beans (drained)
½ cup raisins
4 Tbsps black Olives

Preparation steps

1.
Dissolve the stock cube in the boiling water.
2.
Put the couscous in a large heatproof bowl and pour over the stock. Cover with cling film and leave for 5 minutes until the stock is absorbed. Remove the cling film and fluff up the couscous with a fork.
3.
Stir in the remaining ingredients until well mixed.
