5 ozs Canned tuna
5 ozs Corn (canned, drained)
1 onion (about 50 grams)
1 garlic clove
2 small Tomatoes (about 100 grams)
1 tsp olive oil
1 Tbsp Ketchup (about 20 grams)
½ tsp dried oregano

2 ozs grated Gouda (30% fat. Tr.)
2 sprigs Basil

Preparation steps

1.

Drain tuna and corn in a sieve. Peel and finely chop onion and garlic.

Plunge tomatoes briefly in a pot of boiling water. Remove with a slotted spoon, peel and quarter. Remove stems and seeds and cut into wedges.

3.

Heat olive oil in a non-stick pan over medium heat. Sauté onion and garlic until translucent, about 5 minutes.

Add tomatoes and cook until softened and broken down, about 10 minutes. Season with salt and pepper and stir in ketchup and oregano.

Line a baking sheet with parchment paper. Place rice cakes on sheet and divide tomato sauce over them.

6.

Divide tuna and corn over rice cakes. Sprinkle each with cheese and bake in preheated oven at 200°C (fan 180°C, gas: mark 3) (approximately 400°F) until cheese melts, 10-12 minutes. Rinse basil, shake dry and pluck leaves. Serve pizzas garnished with basil leaves.
