2 Mangoes
2 Avocados
2 tsps lemon juice
2 red onions
300 grams cooked Beets (vacuum-packed)
4 Tbsps white balsamic vinegar
30 milliliters olive oil

Preparation steps

1.

Coarsely chop the walnuts, and toast in a dry pan. Rinse and dry the parsley and chop the leaves. Peel the mango, remove the fruit from the stone, and finely dice.

Halve the avocados, remove the seeds, and remove the fruit from the peel. Chop the avocado and mix with the lemon juice. Peel and finely dice the red onion. Finely dice the beet.

3.

Gently mix all the prepared ingredients just before serving. Drizzle with the balsamic vinegar and olive oil Season to taste with salt and pepper, and serve with a toasted baguette.
