1.333 cups Dark chocolate (70% cocoa, roughly chopped)
¾ cup Milk chocolate (30% cocoa, roughly chopped)
½ cup soft butter
2 tsps Crème fraiche (at least 30% fat)
3 eggs
1 ¼ cups brown sugar
½ tsp salt
1 ¼ cups flour
1 ¼ cups Macadamia Nuts (roughly chopped)
1 Tbsp Baking powder

Preparation steps

1.
Heat the oven to 180°C (160°C in a fan oven), 350°F, gas 4. Grease and dust a loaf tin with butter and flour.
2.
Melt the chocolate and the butter in a bain-marie. Stir in the crème fraîche and leave to cool.
3.
Mix the eggs, sugar and salt in a bowl until the sugar has dissolved and the mixture is white and creamy. Gradually add the chocolate mixture.
4.
Mix together the flour, nuts and baking powder and add to the chocolate mixture pour the mixture into the prepared loaf tin and bake for 35-40 minutes. Test with a wooden stick to check if it is done.
5.
Remove the finished cake from the oven, leave to cool, carefully remove from the tin and serve in slices.
