5 cups baby Spinach (washed)
2 onions (chopped)
2 sticks Celery (chopped)
2 cloves garlic cloves (minced)
1 Leek (halved and sliced)
2 Zucchini (sliced)
2 cups canned Tomatoes
2 cups tomato passata
dried oregano
1 ½ cups Ricotta cheese
4 cups Lasagne noodle (sheets)
1 cup Mozzarella (grated)
Basil
salt
freshly ground Black pepper

Preparation steps

1.
Heat the olive oil in a casserole dish set over a medium heat until hot. Add the onion, celery, garlic, leek, courgette, and a pinch of salt, sweating for 10 minutes until softened.

Add the chopped tomatoes, passata, and oregano. Stir well and simmer briefly, seasoning with salt and pepper.

Preheat the oven to 180°C (160° fan)|350F|gas 4 and line a large rectangular baking dish with some lasagne sheets.

Top with some of the vegetable sauce and follow with some of the ricotta. Repeat the layering with lasagne sheets, vegetable sauce, and ricotta.
5.
Finish with a layer of lasagne sheets and sprinkle over the mozzarella. Bake for 1 hour until golden.
6.
Leave the lasagne to stand for 5 minutes and garnish with basil leaves before serving.
