4 Tbsps olive oil
2 Tbsps White vinegar
1 Tbsp Orange marmalade
salt
freshly ground peppers
250 grams lamb's lettuce
1 can Mandarin orange (approximately 314 ml)
150 grams fresh button Mushroom
150 grams blanched Almond slivers
250 grams Tête de Moine cheese

Preparation steps

Mix oil with the vinegar and the orange marmalade and season with salt and pepper. Trim the lamb's lettuce, rinse and spin dry. Drain oranges through a sieve. Clean the mushrooms and cut into thin slices.

Toast the almonds in a dry frying pan until golden. Remove from pan and set aside. Arrange the lamb's lettuce on plates with Mandarin oranges and mushrooms, drizzle with the vinaigrette, sprinkle with the almonds and serve topped with shaved cheese.
