- ⅞ cup Rice
- 11 ozs turkey breasts
- 1 small onion
- 2 Tbsps Oil
- 1 Tbsp Curry powder
- ⅜ cup Coconut milk
- ⅜ cup vegetable stock
- 1 handful large Spinach
- 1 Tbsp sliced almonds
- light soy sauce
- salt
- freshly ground peppers

Cook the rice according to the package instructions.

Wash and dry the turkey breast and cut into strips.
3.
Peel and finely dice the onion.
4.
Heat the oil and brown the meat on all sides. Add the onion and fry briefly then stir in the curry powder, the coconut milk and stock. Simmer for about 15-20 minutes, stirring occasionally.
5.
Meanwhile wash and sort the spinach. Add to the curry at the end, season with salt and pepper and add soy sauce to taste. Serve on rice, scattered with almonds.
