Preparation steps

Dice all three types of ham into very small cubes. Rinse chives thinly slice crosswise. Dice pickles. Peel and finely chop 2 shallots. Rinse tomatoes, quarter and remove core and seeds. Finely chop.

In a bowl, mix together tomatoes, pickles, chives and diced shallots. Season with salt, pepper, sugar and a dash of lemon.
3.
Place 4 stainless steel dessert rings (8-cm or approximately 3-inches in diameter) on plates and fill with ham mixture. Flatten slightly with a spoon. Garnish with a sliced shallot and some cress. Carefully remove rings. Serve with a fresh baguette or country bread.
