Preparation steps
1.
Heat the oil in a frying pan (skillet) and fry the bacon until lightly browned. Remove from the heat and set aside.
2.
Fry the tomatoes until just starting to soften then remove from the pan and set aside.
3.
Wipe the pan clean with kitchen paper and add the butter. Heat gently until it starts to bubble.
4.
Meanwhile, beat together the eggs and milk and season with salt and pepper. Dip the bread in the egg mixture then fry gently in batches for about 2 minutes on each side or until golden brown.
5.
Make the sandwiches with the ham, tomatoes and watercress, garnish with the tomato wedges and remaining watercress and serve immediately.
