Preparation steps

Rinse eel, pat dry and set aside. Peel and halve garlic. Sprinkle eel with thyme and olive oil. Marinate, covered about 2 hours. Place rosemary needles in the middle of the eel fillets and roll the fish together, securing with toothpicks. Season with sea salt and pepper and grill, turning occasionally about 5-6 minutes.

Rinse the tomatoes, cut out stems and cut in half. Season each cut surface with salt and pepper and drizzle with a little oil. Put on the grill and cook about 2-3 minutes on each side. Remove toothpicks from eel and serve on plates with the grilled tomatoes.
