4 Tbsps low-fat cream cheese
1 scallion (finely chopped)
1 sprig rosemary (finely chopped)
1 sprig thyme (finely chopped)
½ tsp paprika
lemons (juiced)
3 Tbsps olive oil
4 large Field mushroom (stalks removed)
4 slices rustic Bread
7 ozs Halloumi cheese (sliced)
thyme (to garnish)

Preparation steps

1.
Combine the cream cheese with the spring onions, rosemary, thyme, paprika and lemon juice. Season with salt and pepper and set aside.
2.
Heat a griddle pan until it's very hot. Brush the mushrooms, bread and halloumi with the oil and grill for about 3 minutes on each side.
3.
Serve the mushrooms and halloumi on the toast with the paprika cream cheese and garnish with thyme leaves.
