- 4 Tbsps low-fat cream cheese
- 1 scallion (finely chopped)
- 1 sprig rosemary (finely chopped)
- 1 sprig thyme (finely chopped)
- ½ tsp paprika
- lemons (juiced)
- 3 Tbsps olive oil
- 4 large Field mushroom (stalks removed)
- 4 slices rustic Bread
- 7 ozs Halloumi cheese (sliced)
- thyme (to garnish)

Preparation steps
1.
Combine the cream cheese with the spring onions, rosemary, thyme, paprika and lemon juice. Season with salt and pepper and set aside.
2.
Heat a griddle pan until it's very hot. Brush the mushrooms, bread and halloumi with the oil and grill for about 3 minutes on each side.
3.
Serve the mushrooms and halloumi on the toast with the paprika cream cheese and garnish with thyme leaves.
