0.333 cup Sunflower seed
2 scallions (finely chopped)
7 ozs Mushrooms (finely chopped)
4 cups lupin flour (plus extra if needed)
2 Tbsps parsley
7 ozs soybean
½ cup Oatmeal
½ tsp salt
¼ tsp freshly ground peppers
vegetable oil (for shallow frying)
To garnish

Preparation steps

1.
Toast the sunflower seeds in a dry frying pan and set aside to cool.
2.
Mix together all the ingredients and leave to stand for about 15 minutes until easy to shape. If necessary, add more flour or a little water. until the mixture is easy to shape.
3.
Shape into small patties with wet hands.
4.
Heat the oil in a frying pan and cook the patties in batches for about 10 minutes on each side until golden brown. Drain on absorbent kitchen paper and serve immediately garnished with parsley.
