4 ozs dairy-free margarine
parsley (finely chopped)
Chives (finely chopped)
5 cloves garlic cloves (crushed)
1 unwaxed lemon (finely grated zest)
salt
freshly ground Black pepper
4 large, skinless, boneless Chicken breasts
3 Tbsps gluten-free all purpose flour
3 large eggs (beaten)
6 Tbsps gluten-free breadcrumbs
To serve
cooked Green beans

Preparation steps

1.
Mash together the margarine, parsley, chives, garlic, lemon zest, salt and pepper to taste. Roll into 4 logs, wrap in cling film and freeze until firm.

Using a very sharp knife, slice the breasts almost in half horizontally to form a pocket.
3.
Heat the oven to 200°C (180° fan) 400°F gas 6. Line a baking tray with non-stick baking paper.

Lay out the breasts to open. Place the frozen logs down the middle of each, then fold over the breast and secure as tightly as possible with wooden cocktail sticks.
5.
Season the flour with salt and pepper and carefully roll each breast in the seasoned flour, making sure it is well covered.
6.
Roll each breast in the beaten egg and then in the breadcrumbs. Roll for a second time in the egg and a second time in the breadcrumbs.
7.
Place on the baking tray and cook for 40 minutes until the chicken is cooked through.
8.
Serve with green beans.
