- 6 onions
- 6 Fennel bulb
- 6 Tbsps olive oil
- ⅔ cup vegetable stock
- 3 bay leaves
- 1 sprig thyme
- 2 Tbsps honey
- salt
- peppers
Preparation steps
1.
Peel the onions, cut in half across the middle.
2.
Remove the base of the fennel and cut into quarters. Remove any hard woody core but try to leave the bulb intact.
3.
Heat the oil in a large pan then add the onions cut side down and the fennel quarters.
4.
Leave until they turn golden, then reduce the heat, add the herbs, stock and season. Cover and leave to cook gently for 30 minutes.
5.
Add the honey then cook for another 15 minutes. Adjust the seasoning and serve hot.
