1 ½ cups flour
2 tsps Baking powder
½ tsp ground cinnamon
½ tsp ground ginger
1 large Banana (peeled and mashed)
1 ¼ cups Blackberry
2 Tbsps milk
2 Tbsps brown sugar

Preparation steps

Preheat the oven to 180°C/350°F. Grease a loaf pan and sprinkle with flour. Cream the butter and sugar until light and fluffy. Then beat in the eggs one at a time, beating well between additions. Mix the flour and baking powder and sprinkle onto the mixture, then add the spices and mix in. Mix in the mashed banana, blackberries and milk. Turn the batter into the prepared loaf pan, smooth the top and bake in the preheated oven for 45-50 minutes, until the cake is well risen and a wooden cocktail stick inserted into the middle comes out clean. Let cool, sprinkle with brown sugar and serve in slices.
