2 cups all-purpose flour
1 tsp Baking powder
1 tsp sugar
½ tsp salt
¼ cup softened butter
cup Yogurt
2 Tbsps raisins
all-purpose flour (for working the dough)
1 egg yolk
cup Clotted cream
5 ozs Jam (of your choice)

Preparation steps

Heat the oven to 220°C (200°C in a fan oven), 425°F, gas 7.

Knead together the flour, baking powder, sugar, salt, butter and yoghurt to form a smooth dough that is not too sticky. Knead in the raisins. Turn out onto a floured surface and roll out to a thickness of around 2 cm. Cut out scones using a hexagonal cutter (approx. 5 cm in diameter).

Brush with whisked egg yolk and bake for around 15 minutes until golden (do the cocktail stick test). Remove and leave to cool on a wire rack.
4.
To serve, dust lightly with icing sugar. Serve with clotted cream and jam.
