Halve and stone the avocado, then peel and slice the flesh and arrange on serving plates. Squeeze some lemon juice onto the avocado slices to prevent browning.

Whisk together the oil and vinegar until thickened. Season to taste with salt and pepper.

Toss the salad leaves in the dressing and arrange on serving plates.
4.
Arrange the avocado, tomatoes, prawns and orange segments on top of the leaves and garnish with parsley.
