8 cherry Tomatoes (halves)
1 Avocado (diced)
5 Tbsps Lime juice
3 scallions (chopped)
salt

3 Tbsps chopped, fresh cilantro
16 ozs Catfish
4 Flour tortillas
Lettuce

Preparation steps

1.
Mix together the tomatoes, avocado, 2 tablespoons lime juice and spring onions. Season with salt and pepper.

Place the fish in single layer on a baking tray lined with non-stick baking paper. Drizzle half the remaining lime juice over the fish and sprinkle with salt and pepper. Leave to stand for 15 minutes.

Heat the oven to 180°C (160° fan) 350°F gas 4. Heat the grill.

Wrap the tortillas in foil and heat in the oven for about 15 minutes.
5.
Grill the fish for 5-8 minutes, until cooked and opaque in the centre.
6.
Arrange the lettuce on the tortillas and add the fish fillets. Drizzle with the remaining lime juice. Spoon in the avocado mixture and sprinkle with cracked black pepper.
