2 Tbsps runny honey
¼ cup olive oil
2 ⅔ cups Salmon fillet (skinned and cubed)
1 Cucumber (peeled, de-seeded and cubed)
2 Tbsps Dill (chopped, plus a few sprigs to garnish)
8 wooden Skewer (soaked in water for 30 minutes)

Preparation steps

Whisk together the honey and olive oil in a mixing bowl and marinate the salmon in it for at least 15 minutes.

Heat the grill to hot.
3.
Prepare the skewers by starting with the cubes of cucumber then salmon on the skewers, alternating, so that you have 4 cubes of cucumber and 3 cubes of salmon. Brush with a little of the marinade and season.
4.
Grill for 5-6 minutes, turning frequently to cook the salmon evenly. Remove and garnish with the chopped dill and sprigs of dill. Arrange in glasses and serve immediately.
