4 large eggs
2 large egg yolks
cup Whole milk
1.333 cups Tuna (cut into strips)
thyme (to garnish)
salt
freshly ground Black pepper

Preparation steps

1.
Pre-heat the grill to hot. Whisk together the 4 eggs with the milk and some seasoning in a mixing bowl.
2.
Melt the butter in a large, heatproof frying pan set over a moderate heat.
3.
Add the eggs to the pan once the butter stops foaming, then sprinkle the tuna on top.
4.
Transfer to the grill for roughly 3 minutes until the tuna is just cooked.
5.
Remove the pan from the grill once the tuna is cooked and carefully place the egg yolks on top of the omelette.
6.
Flash the pan under the grill for a minute to help cook the egg yolks. Remove and garnish with the thyme sprigs before serving.
