3 yellow Tomatoes (diced)
3 green Tomatoes (diced)
2 balls Buffalo mozzarella (drained and diced)
1 cup black Olives (pitted)
3 sprigs Basil
2 Tbsps olive oil

Preparation steps

1.
Take the tops off the beef tomatoes and hollow out with a teaspoon.
2.
Sprinkle the insides with a little salt and leave to drain upside down for 30 minutes, then pat dry.
3.
Mix together yellow tomatoes, green tomatoes, and mozzarella with the olives, olive oil, seasoning and basil.
4.
Spoon into the beef tomatoes and serve at room temperature.
