1 ⅔ cups Feta (cubed)
1 red pepper (seeds removed and sliced)
1 yellow pepper (seeds removed and sliced)
2 cloves garlic cloves (finely chopped)
1 Tbsp Tomato paste
1 tsp dried oregano
1 tsp Dijon mustard
3 Tbsps white wine vinegar
½ cup olive oil
cup black Olives

Preparation

Preparation steps

1.
Place the cucumber, feta cheese, onions and peppers in a large bowl.
2.
Mix together the tomato paste, oregano, mustard and vinegar in a small bowl. Whisk in the olive oil and season with salt and pepper.
3.
Pour the dressing over the vegetables and gently mix together.
4.
Scatter over the olives and serve.
