6 ozs Medjool Date (15 Medjool dates; without pits)
7 ozs butter (room temperature)
1 tsp butter (for the mold)
4 eggs
7 ozs sugar-free apple sauce
18 ozs Spelt flour
1 tsp Baking powder
salt
8 ozs milk

Preparation steps

1.

Cover dates with water and soak them for 12 hours, preferably overnight, and the next day pour off the soaking water and purée the dates finely.

2.

Whip the butter until fluffy. Add the eggs one by one and continue stirring. Mix the date puree with apple sauce and stir in the butter mixture. Mix flour with baking powder and 1 pinch of salt and gradually stir into the mixture with milk to form a smooth dough.

3.

Put the dough into a greased loaf pan, smooth it down and bake in a preheated oven at 350°F for 50-60 minutes. Remove from the oven and leave in the form for 10 minutes. Turn out onto a cake rack and let cool down. Tip: Decorate the cake with melted dark chocolate and chopped pistachios.
