500 grams King prawn (frozen, peeled and cooked)
200 grams Udon Noodle (from an Asian supermarket)
salt
2 medium sized Leeks
3 Tbsps vegetable oil
½ tsp yellow Curry paste
125 milliliters Vegetable broth
5 Tbsps soy sauce

Preparation steps

1.

Thaw prawns, rinse and pat dry. Cook pasta in a pot of boiling salted water according to package directions and drain.

Rinse leeks, trim and cut white and light green portions in matchstick strips.

Heat oil in a pan, fry shrimp for 3-4 minutes and season with salt. Remove from the pan. Add leeks to the pan and fry for about 3 minutes while stirring. Then add curry paste and cook for a few minutes. Add pasta, stir and cook for 3 minutes. Add broth and soy sauce and bring to a boil. Add prawns, mix and heat. Serve immediately in bowls.
