- 1 can Coconut milk (400 ml)
- 200 grams cooking-ready shrimp
- 200 milliliters Chicken broth
- 1 heaping Tbsp yellow Curry paste (Asian)
- 1 green Bell pepper
- 1 large white onion
- 2 garlic cloves
- ½ stalk Leeks
- sesame oil
- salt

Preparation steps

Rinse peppers, cut in half, remove seeds and cut into very small cubes. Peel onion and garlic and chop finely. Rinse leek, trim and cut into fine strips.

Heat 2 tablespoons sesame oil and saute onion and garlic until translucent. Add curry paste and saute briefly. Add chicken stock, bell peppers and leeks and cook covered over medium heat 5-6 minutes. Add coconut milk and simmer (without lid) for another 10 minutes. Add shrimp and simmer over low heat additional 3 minutes. Season with salt and serve immediately in prepared coconut halves.
