Preparation steps

Rinse the currants, pat dry, and remove from the vine. Bring the sugar, lemon juice, and 500 ml (approximately 17 ounces) of water to a boil. Reduce the heat and simmer for 5 minutes. Remove from the heat, add the currants, and crush lightly with a potato masher. Cover the pot and let infuse for at least 4 hours.

Pass the mixture through a fine strainer, reserving the liquid. Bring the liquid to a bottle, then pour it into the prepared, sterilized bottles. Seal the bottles tightly and cool completely.
