400 grams button Mushroom
2 Tbsps butter
salt
¾ l Vegetable broth
100 grams Crème fraiche
allspice
1 tsp lemon juice
1 Tbsp chopped parsley

Preparation steps

1.

Wipe mushrooms with paper towels to clean then slice. Sauté approximately 1/4 of the mushrooms in a saucepan with 1/2 tablespoon butter. Season with salt and pepper. Set aside for garnish.

2.

Add remaining butter to pan. Sauté remaining mushrooms briefly.

3.

Add broth to pan and simmer, covered, for 20 minutes. Purée then stir in creme fraiche.

4.

Season to taste with salt, pepper, a little allspice and lemon juice. Serve garnished with reserved mushrooms and parsley.
