½ handful cilantro
2 egg yolks

2 tsps Indian Curry powder
1 tsp spicy Mustard
250 milliliters sesame oil
1 Tbsp Lime juice

Preparation steps

Rinse the cilantro and pat dry. Remove the leaves from the stems and coarsely chop. Place the egg yolks in a bowl. Add the curry powder, mustard, and some salt to the eggs and whisk until combined.

Gradually incorporate the oil, starting with a few drops at a time. Whisk the oil into the eggs, until it has been absorbed. Gradually increase the amount of oil to a thin stream, continuing to whisk until the oil is completely absorbed.

Add enough oil until a thick, creamy mayonnaise has formed. The mayonnaise should have a nice shine to ot. Season to taste with lime juice, stir in the cilantro, and serve.
