Ingredients

- For the salad
- 4 cups Watercress (washed)
- 4 Beets (ready-cooked and sliced)
- 2 carrots (peeled)
- 1 handful Dulse Seaweed (or hijiki seaweed)
- For the dressing
- 1 Tbsp Sherry vinegar
- 1 tsp Dijon mustard
- salt
- peppers
- ⅜ cup extra-virgin olive oil
- In addition
- 1 Tbsp Sesame seeds
Preparation steps
1.
Place the watercress and beetroot in a bowl with the seaweed.
2.
Coarsely grate or cut the carrots into fine matchsticks – it’s up to you – and add to the bowl.
3.
Whisk together the ingredients for the dressing.
4.
Combine the salad with the dressing, coating thoroughly. Sprinkle over the sesame seeds and serve.
