Preparation steps

Bring the sugar and 200 ml (approximately 3/4 cup) of water to a boil and boil for 1 minute then remove from the heat and let cool. Divide the syrup in thirds and mix one-third with mango, one-third with cherries and one-third with lemon juice.

Pour the fruit pulp separately into shallow metal pans and freeze, stirring well with a whisk occasionally until the mixtures freeze. Spoon half of the cherry sorbet in a chilled loaf pan and smooth, then top with half of the lemon sorbet and smooth and finally the mango sorbet smooth. Repeat layers once. Cover and let freeze 2-3 hours. To serve, cut into slices and garnish as desired with mango pieces and lime zest.
