600 grams Chicken breasts
1 onion (finely diced)
1 garlic clove (finely diced)
2 Tbsps Ghee (or vegetable oil)
2 Kaffir lime leaves
1 Tbsp yellow Curry paste
1 generous pinch Saffron
2 Tbsps Garam Masala
200 milliliters Chicken broth
100 milliliters Coconut milk
1 chili pepper
salt

2 Tbsps Shredded coconut (for garnish)
Chili thread (for garnish)

Preparation steps

Rinse chicken, pat dry and cut into strips. Heat ghee in a pan and fry chicken on all sides until browned. Add onion, garlic, lime leaves, saffron, chile pepper, curry paste and garam masala and mix. Add chicken broth and coconut milk, stir and simmer over low heat for about 8-10 minutes. If necessary, season with a little salt.

Pour coconut chicken curry into preheated bowls and serve garnished with chili thread and shredded coconut.

Recommend serving with Indian naan bread or rice.
