½ cup xylitol
½ cup butter
3 eggs
1 tsp vanilla extract
¾ cup sugar-free blackberry jam
2 cups Shredded coconut

Preparation steps

1.
Heat the oven to 180°C (160° fan) 350°F gas 4. Grease a deep 24cm x 29.5cm|9 1/2" x 12" baking tin and line the base with non-stick baking paper.

Put the flour and half the xylitol in a mixing bowl and rub in the butter until the mixture resembles breadcrumbs.
3.
Add 1 egg and the vanilla and mix to a dough.
4.
Press the dough into the base of the tin. Bake for 15-20 minutes, until light golden.
5.
Spread the jam over the warm base.
6.
Whisk together the remaining eggs and xylitol. Stir in the coconut and spread over the jam.
7.
Bake for about 25 minutes, until golden. Cool completely in the tin, then cut into pieces.
