1 Tbsp Coconut flour
¼ cup Almond butter
3 Medjool Date (pitted)
0.333 cup Shredded coconut
¼ cup apple sauce
1 egg
½ tsp Almond extract
1 pinch Sea salt
¼ tsp baking soda
2 Tbsps dried Cherries

Preparation steps

1.
Heat the oven to 180°C (160° fan) 350°F gas 4. Line a large baking tray with non-stick baking paper.
2.
Place the coconut flour, almond butter and dates into a food processor or blender and blend until the dates are finely chopped and the mixture is well combined.
3.
Add the coconut, apple sauce, egg, bicarbonate of soda, salt and almond extract and blend until well combined. The mixture will be very sticky.
4.
Add the cherries and blend until just combined.
5.
Place tablespoonfuls of the mixture onto the baking tray. Using damp fingers, pat into rounds. The biscuits won't spread or rise.
6.
Bake for 10-12 minutes, until golden. Cool on the baking tray for 10 minutes, then place on a wire rack to cool completely.
