1 ½ cups Cider vinegar
1 tsp salt
1 cup sugar
½ tsp ground ginger
14 ozs Celery (chopped)
14 ozs cooking Apple (peeled, cored and diced)
2 Tbsps Caper (rinsed)

Preparation

Preparation steps

1.
Put all the ingredients except the capers into a large heavy-based pan. Heat gently, stirring, until the sugar has dissolved.
2.
Increase the heat and bring to a boil. Reduce the heat and simmer until the apples and celery are tender and the mixture is thick. Stir in the capers.
3.
Spoon into hot sterilised jars, cover, seal and label.
