3 ½ cups Green beans (ends snipped off)
2 cups Cocktail tomatoes (quartered)
1 Lollo Bianco (torn into bite-sized pieces)
1 ½ cups mini Bocconcini (drained)
3 Tbsps white wine vinegar
6 Tbsps vegetable oil
1 tsp honey
1 onion (finely diced)
¾ cup Pine nuts
2 Tbsps Golden raisins

Preparation steps

1.
Blanch the beans in boiling salted water for 4 minutes. Remove, rinse with cold water and drain well.
2.
Arrange all the ingredients (apart from the onion) on plates and make a dressing by mixing together the vinegar, oil, honey, onion, ground black pepper and salt. Drizzle the dressing over the salad.
3.
Dry roast the pine nuts and sprinkle on top of the salad with the sultanas.
