16 ozs Parsnips (peeled)
¼ cup Oil
¼ cup butter (melted)
1 pinch salt
1 pinch cayenne pepper
¼ cup sugar

Preparation steps

1.
Heat the oven to 200°C (180° fan) 400°F gas 6.
2.
Halve or quarter larger parsnips lengthwise.
3.
Place the parsnips in a roasting tin. Mix the oil and butter and stir in the salt, cayenne pepper and sugar. Pour over the parsnips and mix well so that the parsnips are coated.
4.
Roast for 35 minutes, until tender and golden-brown.
