1 Pumpkin (cut into thick slices)

2 Red onions (cut into wedges)
1 Fennel bulb (quartered)
1 Tbsp Caper
4 Tbsps extra virgin olive oil
2 Tbsps fresh lemon juice
To garnish
Chicory (endive)
mint

Preparation steps

1.
Heat the oven to 200°C (180° fan) 400°F gas 6.
2.
Put the pumpkin slices into a roasting tin and season with salt and pepper. Drizzle with oil and cook for 30 minutes.
3.
Add the onion and fennel to the roasting tin and drizzle with oil. Cook for a further 20-25 minutes, until the vegetables are tender. Remove from the tin and leave to cool.
4.
Stir together the capers, extra virgin oil and lemon juice. Season to taste with salt and pepper. Pour over the vegetables and toss gently.
5.
Put onto serving plates and garnish with chicory and mint leaves.
