1 large shallot (thinly sliced)
2 carrots (cut into thin matchsticks)
16 Snap pea (halved lengthways)
16 Broccoli
4 fresh Salmon fillet
salt

2 Tbsps chopped parsley
1 unwaxed lemon (grated zest)

Preparation steps

1.
Heat the oven to 190°C (170° fan) 375°F gas 5. Cut 4 pieces of non-stick baking paper, measuring about 23cm|9" square. Drizzle with olive oil.
2.
Sprinkle the shallot over each square and arrange the vegetables and salmon fillets on top. Season with salt and pepper and sprinkle with parsley and lemon zest.
3.
Wrap up the paper to form parcels, folding the edges to seal. Place on a baking tray and bake for 10-15 minutes until the salmon is cooked and the vegetables are tender.
