400 grams Cuttlefish (trimmed, ready to cook)
2 garlic cloves
4 Anchovy fillet (in oil)
2 Tbsps lemon juice
2 Tbsps vegetable oil
1 Tbsp Coriander
freshly ground peppers
250 grams Egg noodle
125 milliliters Peanut oil
1 Mango
1 handful Arugula

Preparation steps

1.

Rinse squid, pat dry and cut into rings.

2.

Peel garlic. Puree anchovy fillets with garlic, 2 tablespoons oil and lemon juice in a blender.

3.

Cook pasta in a pot of salted water until al dente, drain thoroughly and pat dry.

4.

Peel mango and cut fruit away from the pit and then cut into long strips.

5.

Heat 100 ml (approximately 3 1/2 ounces) oil in a wok and fry pasta in portions until crispy, keep warm and remove oil.

6.

Heat remaining oil in the wok, fry mango slices and remove from the wok. Immediately add squid and fry for about 3 minutes. Add anchovy paste and coriander paste, boil while stirring, add mangoes again and season with pepper.

7.

To serve, arrange noodles on plates with squid and mango and garnish with arugula.
