200 grams Red lentils
2 carrots
1 small Napa cabbage
1 chili pepper
50 grams button Mushroom
1 garlic clove (finely chopped)
200 milliliters Vegetable broth
½ tsp Curry powder
Light soy sauce
3 Tbsps vegetable oil
2 Tbsps Mango puree

Preparation steps

1.

Rinse and drain the lentils.

2.

Peel and coarsely grate the carrots.

3.

Rinse the Chinese cabbage and cut into strips.

4.

Rinse the chile, slit lengthwise, remove the seeds and white ribs and cut into fine strips.

5.

Clean the mushrooms with a damp cloth and slice.

6.

Heat the oil in a skillet and sauté the mushrooms with the garlic briefly. Add the carrots, curry powder, chile and Chinese cabbage. Deglaze with the broth and stir in the lentils. Simmer, stirring occasionally until the vegetables are crisp-tender, 8-10 minutes. Add the mango puree,  season with soy sauce and serve.
