Ingredients

For the hummus
2 cloves garlic cloves
2 ½ cups canned chickpeas (drained and rinsed)
½ tsp ground Cumin
kosher salt (to taste)
4 Tbsps freshly squeezed lemon juice
2 Tbsps plain, low-fat Yogurt
2 Tbsps olive oil
3 Tbsps Tahini
8 large wraps
2 cups fresh Spinach
1 medium, red Bell pepper (cut into thin strips)

Preparation steps

For the Hummus:

Turn on a food processor fitted with the steel blade, and drop in the garlic cloves. Process until they are chopped and adhere to the sides of the bowl. Scrape down the sides of the bowl. Add the remaining ingredients, and process until very smooth. Taste and adjust seasonings.

For the Wrap:

Warm the wraps for about 10 seconds in the microwave or with tongs over a gas burner, just until they are flexible. Lay on a work surface and spread a few tablespoons of hummus in the middle of each wrap. Layer the spinach leaves and red pepper on top. Fold over the sides of the wrap to cover. Slice and serve.
