Preparation steps

Rinse meat and pat dry. Whisk oil with wine, lemon juice, salt and pepper, add meat and marinate, covered, for 24 hours in refrigerator, turning once.
2.
2 hours prior to grilling, remove meat from the refrigerator, drain well and sear on hot grill on both sides. Move to a less hot spot and cook for 10-12 minutes more, turning. Remove from the oven and let rest, covered, for 5 minutes. Serve.
