9 ozs Yufka pastry
¼ cup melted Margarine
1 egg white
2 Tbsps honey
1 cup Walnut (ground)
½ cup almonds (ground)
¾ cup Pistachio (chopped)
½ tsp ground cinnamon
1 tsp Rose water
½ cup sugar
2 Tbsps lemon juice
Plus
2 unwaxed Oranges (cut into triangles)
4 Cinnamon stick (to garnish)
6 Tbsps runny honey

Preparation steps

1.
Carefully separate the pastry sheets and cut them to fit the baking dish. Cover with a damp cloth.
2.
Heat the oven to 220°C (200°C in a fan oven), 425°F, gas 7 and grease a baking dish with Nuttelex.
3.
Beat the egg white until stiff and stir in the honey, nuts, cinnamon and rose water.
4.
Place a layer of pastry sheets in the baking dish and spread with the nut mixture and continue like this until the nut mixture is used up and there are three sheets of pastry remaining. Place these three on top. Bake for around 30 min.
5.
Place the sugar in a pot with 125 ml water and simmer for 1 min. Leave to cool slightly and then stir in the lemon juice.
6.
Remove the baklava from the oven and pour the syrup on top whilst they are still warm. Leave to cool.
7.
To serve, remove from the dish and cut into slices. Arrange on plates with the oranges and cinnamon sticks, drizzle with the honey and dust with icing sugar.
