2 ¼ cups sugar
2 Vanilla bean (cut in half lengthways)
4 sour Apple (approx. 150 g each, peeled and cored)
8 ozs frozen Puff pastry (defrosted)
2 Tbsps slivered almonds
1 egg yolk (beaten)
3 Tbsps powdered sugar

Preparation steps

1.
Place the sugar and the vanilla pods in a pot with 500 ml water. Bring to the boil, stirring continuously until the sugar has dissolved then reduce the temperature.
2.
Place the apples in the syrup, cover and simmer on a low heat for 8 min. Remove from the heat and leave to cool.
3.
Heat the oven to 180°C (160°C in a fan oven), 350°F, gas 4 and line a baking tray with greaseproof paper.
4.
Cut the puff pastry sheets in half and roll them out on a floured work surface approx. 15 cm square. Drain the apples and place each one on a square of pastry. Sprinkle with the almonds and then wrap the pastry around the apple pinching the corners together. Brush with the egg yolk and place on the prepared baking tray.
5.
Bake for around 35-45 min. Dust with icing sugar and serve immediately.
