3 eggs
1 cup plain Yogurt
2 tsps sugar
½ tsp salt
vanilla extract
1 ¾ cups all-purpose flour
1 ½ tsps baking soda
cup sunflower oil (for frying)
powdered sugar (for dusting)

Preparation steps

1.
Whisk the eggs in a mixing bowl, add the yoghurt and mix well.
2.
Whisk in the sugar, salt and vanilla.
3.
Sift in the flour and bicarbonate of soda and gradually beat into the egg mixture. Beat well until thick.
4.
Heat the oil in a frying pan. Scoop spoonfuls of the mixture into the hot oil and fry for 20-30 seconds on each side until golden brown.
5.
Drain on absorbent kitchen paper and sift icing sugar over the top.
