Preparation steps
1.
Heat the oven to 190°C (170° fan) 375°F gas 5.
2.
Slice the tops from the courgettes. Scoop out the seeds and enough flesh to leave a strong wall.
3.
Dice 2 courgette tops.
4.
Mix together the ham, diced courgette, goats cheese, pine nuts, cabbage and nutmeg. Season to taste with salt and pepper.
5.
Spoon the stuffing into the courgettes and place in a baking dish. Drizzle with the oil and cook for 30-40 minutes until the courgettes are tender.
6.
Garnish with tarragon and pine nuts
