Preparation steps

1.

Peel the corn on the cob, making sure to remove all of the silk. Bring a pot of water to a boil, and season with salt and sugar. Add the corn, and simmer gently for 15 minutes. Remove from the water, drain well, and cut into 2-3 cm (approximately 3/4-1 inch) wide pieces.

Toast the pine nuts in a dry pan. Remove from the heat and let cool.

Heat the butter in a pan. Add the corn and sauté the corn for 2 minutes. Season to taste with salt and pepper.

Rinse and trim the spinach, then pat dry. 

5.

Mix the vinegar and oil to form a vinaigrette. Season to taste with salt and pepper. Mix the spinach, corn, and pine nuts. Add the vinaigrette, and toss to combine. Place on a large platter, and serve immediately.
